The laws of nature

By accepting the climate of Kagoshima and respecting the laws of nature that have blessed the land around us, we strive to create delicious sake that is unique to our environment.

Seimai/Rice polishing

We carefully select the optimal rice and brew our sake within Kagoshima’s land.
Each grain of rice is packed with umami, and our craftspeople approach sake brewing with all their senses sharpened in order to bring out the best of the ingredients.
We also harvest rice from our own fields in order to research and explore the possibilities of our ideal rice.

Water

The rains that fall from the skies of Satsuma seep slowly into the earth, eventually collecting as groundwater deep below, traveling at only a rate of 1m per year.
Naturally filtered by the soil over many years, the water becomes soft and has a subtle sweetness.
It is beloved as our original Nishi Shuzo bottled mineral water, HOUMEI.
Water is the lifeblood of sake brewing, and so our sake expresses the flavor that can only be made from this water.
